Pork & Black Bean Chili - Crock Pot |

Ingredients
|
* 1 1/2 pounds boneless pork, cut into 1/2-inch cubes
* 2 (15 1/2 oz each) cans black beans, drained but not rinsed
* 1 large chopped onion
* 1 large chopped yellow bell pepper (green pepper is fine if you have one on hand)
* 1 cup chunky salsa (your favorite)
* 1 (15 1/2 oz) can diced tomatoes, undrained
* 2 cloves garlic, minced or grated
* 1 teaspoon chili powder
* 1/2 teaspoon cumin
* 1/4 teaspoon crushed red pepper

Directions

1. Put everything in a crock pot and mix well.
2. Cook on low, covered, for about 8 hours.
3. Salt if needed.

I like to use pork for my chili because of the great flavor it adds. You can substitute half with beef if you desire, but there are many nice lean cuts of pork to use if you want to keep your chili on the "diet friendly" side.
