Sweet Potato Pork Stew - Crock Pot


* 1 tablespoon good vegetable oil (or other high heat oil)
* 1 (2 pound) boneless pork roast (nice and lean)
* salt and black pepper to taste

* 4 sweet potatoes, peeled & quartered
* 1 large onion, quartered
* 6 cloves garlic, minced or grated
* 1 can (14 1/2 oz) chicken broth


1. Sprinkle salt and black pepper on pork roast. Brown meat on all sides in hot oil in large heavy skillet.
2. Place sweet potatoes, onion and garlic in crock pot. Put meat on top, then pour chicken broth in, covering vegetables.
3. Cook, covered, on low for 6-8 hours.


Delicious and low glycemic! If you are on a "reduced sugar" type diet, try this one! Sweet potatoes are (contrary to their name) low glycemic; unlike their contemporary - white or red potatoes.

As for pork, it is, after all, "the other white meat". Look for a nice lean cut and you've made yourself a pretty diet friendly meal.
