Crunchy Garbanzo Veggie Patties


*1 (13 oz) can garbanzo beans, rinsed and drained
*1 small red onion, chopped
*2 oz carrot, finely grated
*1/2 tsp ground cumin
*2 tbsp ground pumpkin seeds
*1 dash of soy sauce
*1 tbsp olive oil


1. Place all ingredients except the oil in a bowl and mash with a potato masher.
2. Form into four burgers.
3. Heat the oil in a skillet, add the burgers and cook for 4 minutes per side or until browned. Serve with burger buns and a tossed salad.


Make up a batch of these in mini sizes and serve at a ladies luncheon, book club, or any event when you want to impress your guests with your ingenuity. Figure friendly and tasty - these patties go well alongside a salad or alone served as "sliders" - tiny little burger-style snacks.
