Dijon Egg Salad Sandwich |
Ingredients

* 6 hard boiled eggs, peeled & chopped
* 1/4 cup mayonnaise
* 1 teaspoon Dijon mustard
* 1/2 teaspoon yellow mustard
* the juice from 1/2 a lemon
* 1/4 cup chopped green onions
* your favorite bread
* optional garnishes: sliced sweet onion, tomato, or lettuce leaf

Directions

1. Combine all mayo, mustards, lemon and onion in a bowl. Mix together.
2. Gently mix in eggs, add salt and pepper to taste.
3. Spread on your favorite bread, adding a thin slice of onion, or a tomato slice, or lettuce leaf if desired.

If you've ever whipped up an egg salad sandwich, only to be thoroughly disappointed with the bland results, you were missing a key ingredient. Egg salad is not egg salad without mustard. This recipe is brightened up by using both Dijon and yellow mustard, along with a splash of lemon juice. The ingredients make ALL the difference between bland and Yummy!
