Easy Chocolate Walnut Fudge


* 1 box (1 lb) confectioner sugar
* 2 eggs, beaten well
* 1 cup chopped walnuts
* 1 tsp. vanilla
* 6 squares unsweetened chocolate, chopped
* 2 Tbsp butter, soft


1. Line 8 inch baking pan with parchment paper.
2. Mix sugar into beaten eggs in large bowl, then stir in walnuts and vanilla.
3. Melt chocolate and butter together in double boiler over medium heat, stirring constantly.
4. Pour chocolate into bowl with walnut mixture and mix with large wooden spoon or rubber spatula until combined well.
5. Turn out into prepared pan, smoothing the top slightly. DO NOT over handle the fudge.
6. Let sit in cool dry place until firm.
7. Remove from pan, peel off paper, and cut with sharp knife into small squares.
8. Store in cool dry place.


There are even simpler recipes for fudge (like microwave fudge) but to tell you the truth, this one is just a bit tastier. It only takes one or two steps more, but is well worth the mini-effort! Enjoy!
