Fresh Ginger Dressed Cool Cucumber Salad |
Ingredients

* 4 small to medium cucumbers, peeled
* 1/3 cup rice vinegar
* 4 tsp white sugar
* 1 tsp kosher salt
* 1 1/2 tsp minced fresh ginger root

Directions

1. Cut cucumbers in half lengthwise and remove any large seeds and extra watery flesh if necessary.
2. Slice into very thin pieces, crosswise, into crescent shapes.
3. In a bowl, whisk together the vinegar, sugar, salt, and ginger.
4. Add the cucumbers to the bowl and toss together until well coated.
5. Cover and refrigerate for at least an hour before serving so the flavors blend well.

Cucumber and ginger are two of my favorite flavors. Be sure to choose young, fresh cucumbers so you get that really great aroma and flavor. This salad is very simple to make but packs a wallop!
If the cucumbers are small and young enough, you may be able to skip the peeling, or just peel strips off instead of the whole thing. You may want to score the cucumbers then with a fork, by running the fork down the peel, scratching marks down from end to end.
