Garlic Mashed Red Potatoes - Crock Pot |
Ingredients

* 3 lbs small red potatoes, quartered
* 5 garlic cloves, minced
* 2 tablespoons olive oil
* 1 teaspoon salt
* 1/8 teaspoon pepper
* 1/2 cup water
* 1 cup cream cheese with onions and chives, softened
* 1/3 to 1/2 cup whole milk

Directions

1. Mix potatoes with garlic, oil, salt and water in a crock pot. Cook, covered, on high for about 4 hours; until potatoes are soft and tender.
2. Mash potatoes. Add cream cheese and enough milk to make potatoes as creamy as you'd like.

I love being able to walk away from a pot of potatoes without worrying about them boiling over. This is a great "fancy" mashed potato that's perfect during the holidays or any big meal with lots of company. It cooks away, all by itself, until ready to mash and serve. That really frees up the host to visit a bit. Oh, yes, did I mention how deliciously wonderful these potatoes are? They are!
