Ginger Cucumber Mango Salsa |
Ingredients

* 2 mangoes, diced small
* 2 small cucumbers, peeled and diced small
* 1 Tbsp fresh grated ginger root
* 2 tsp fresh lime juice
* 1 Tbsp extra virgin olive oil
* 1/2 cup fresh cilantro, chopped
* 1/2 tsp salt
* 1/8 tsp black pepper

Directions

1. In a glass bowl, put the mangoes, cucumbers, ginger, lime juice, olive oil, cilantro, salt and pepper; toss to combine well.
2. Cover bowl with plastic food wrap and refrigerate for at least 30 minutes before serving.
3. Spoon salsa alongside grilled fish or other seafood.

If you are used to seeing salsa made with tomatoes, this recipe will surprise and delight you.
The combination of sweet and savory is the perfect complement to seafood. Cucumbers are a classic taste combo for salmon and tuna, but just about any seafood will go well. You may also enjoy this salsa with grilled pork tenderloin because sweet flavors always go well with pork.
Be sure you use small, young cucumbers. The flavor is always better than the bigger ones. If the cucumbers are young enough, you may be able to skip peeling them. Just 'score' the outside of the cucumbers with a fork to tenderize the peeling.
