Ham and Turkey Tostadas


* 4 small flour tortillas
* Olive oil
* 4 tbsp mango chutney
* 4 oz. cooked good quality ham
*4 oz. cooked good quality turkey
* 9 oz. cheddar, grated
* 4 spring onions, chopped


1. Set oven on 400 to preheat.
2. Brush one side of tortilla with oil and put oiled side down on cookie sheet.
3. Cover the tortilla with the chutney.
4. Add the ham and turkey over the chutney.
5. Sprinkle each tortilla with cheese and onions.
6. Fold the tortilla's over to close.
7. Bake 8 minutes or until crispy.


My family loves this simple and delicious version of a tostada because it's sweet and easy to make... filling, too! This is one of our very kid-friendly recipes. You can, of course, eliminate the onion if your kids are not fans.

Chutney is a sweet and sour condiment that is similar to fruit jellies or preserves. Because it has both sweet and sour flavors, it works well for this sandwich, but you could substitute any preserves if you needed. To get that sour side of the equation, just mix in a touch of vinegar.
