Healthy Greens Dipping Sauce for Shrimp


* 1 cup mayonnaise
* 1/2 cup spinach leaves
* 5 watercress sprigs (substitute fresh parsley if you can't get watercress)
* 1/2 small onion, chopped
* 1 small garlic clove
* 1 tablespoon fresh lemon juice
* optional: sugar or honey to taste if you wish
* optional: salt to taste if you wish


1. Put all ingredients in a blender and blend until smooth. Refrigerate until ready to use.


I'm not a big fan of cocktail sauce for shrimp, but until I found this recipe didn't know what else to try. This blended dipping sauce is real nice and fresh tasting and brings out the flavor of the shrimp rather than hiding it. We have grilled shrimp quite often and this is the perfect compliment, but if you steam or saute your shrimp, the results are still the same. Perfect!
