Herbed Brown Rice


* 8 oz brown rice
* 18 fl oz water
* 4 tbsp oil
* 2 tbsp white wine vinegar
* 1 clove garlic, crushed
* Salt and pepper to taste
* 2 tbsp fresh parsley, finely chopped
* 2 tbsp fresh chives, finely chopped


1. Cook brown rice according to directions on package or automatic rice cooker.
2. Whisk together the oil, vinegar, garlic, salt and pepper in a mixing bowl.
3. Stir the oil mixture into the rice while the rice is still warm.
4. Cool the rice for 10 minutes.
5. Stir the parsley and chives into the rice before serving.


Brown rice is a staple in our house, so finding new ways to serve it is essential. Just mixing in a few fresh herbs works well, but the added "oil and vinegar dressing" with garlic really makes this dish stand out. This is the perfect side dish for grilled chicken or even a fat, juicy steak.
