Herbed Chicken Artichoke Bake


* 3 lbs chicken breasts
* 1 medium onion, chopped
* 2 cloves garlic, minced
* 4 oz fresh mushrooms, sliced
* 3 tablespoons flour
* 1 teaspoon salt
* 1/2 teaspoon paprika
* 1/4 teaspoon rosemary
* 1/2 cup chicken broth
* 1/4 cup sherry
* 1 can artichoke hearts, drained


1. Preheat oven to 400.
2. In baking dish, combine onion, garlic and mushrooms.
3. In shallow pan or bowl, add flour, salt, paprika and rosemary and mix together.
4. Dredge chicken through the flour mixture, then place on top of vegetables in baking dish.
5. Pour broth and sherry over chicken in baking dish.
6. Bake for 1 hour at 400 degree oven or until juices run clear.
7. Top with artichoke hearts and bake another 10 minutes.


There are a lot of flavors going on in this chicken dish. I would have to say it's really a good grown-up dish and very suitable for company. The artichoke hearts give it just the right touch.

Watch your oven heat. If the chicken breasts are smaller, you don't want to over-cook them. Check the dish at 45 minutes if you're worried, or you can reduce the heat. I have the heat at 400 degrees because sometimes those chicken breasts can be very big and thick. You can judge for yourself.
