Herbed Goat Cheese Bruschetta |
Ingredients

* 1 loaf hearty French bread or similar, sliced
* 1 lb. goat cheese
* 2 Tbsp balsamic vinegar
* 1 lemon, juiced
* 1 tsp honey
* 1 garlic clove, grated
* 1/2 Tbsp fresh dill, chopped fine
* 1/2 Tbsp fresh basil, chopped fine
* 1/2 Tbsp fresh parsley, chopped fine
* sprinkle red pepper flakes
* 1/2 cup olive oil
* 1/4 tsp salt
* 1/8 tsp black pepper
* optional: cherry tomatoes, halved

Directions

1. In bowl, whisk together the balsamic vinegar, lemon juice, honey, garlic, the herbs, and red pepper flakes. Drizzle in the olive oil, whisking constantly, until mixture thickens. Add the salt and pepper and whisk just until combined.
2. Arrange toast on large sheet and toast in oven for 4 to 5 minutes or until lightly browned.
3. Remove from oven and immediately divide goat cheese evenly over toast, then drizzle the herbed dressing evenly over the top of each piece. Top each with a couple cherry tomato halves if desired, and serve warm or room temperature.
