Lazy Day Beef & Noodles Skillet


* 1 lb ground beef
* 2 cups egg noodles, not cooked
* 1 cup frozen whole kernel corn
* 1 cup chopped green onions (or a nice sweet onion, diced)
* 1 cup water
* 1/2 cup favorite salsa (optional. You may want to try 1/2 cup of any "cream of" soup, or even another finely diced vegetable.)
* 2 cans (8 oz each) tomato sauce
* salt and pepper to taste (watch the salt... you may have plenty in the salsa or soup you've choosen)


1. Brown beef in large skillet over medium heat. Drain any fat.
2. Add remaining ingredients and mix well. Bring to a boil, then reduce heat to low, cover and simmer for 10-12 minutes or until noodles are tender, stirring several times.


I love this traditional stove-top casserole. It reminds me of the 1950's. Of course, our Mom's started adding all sorts of leftovers to this classic which resulted in all our favorite "Feel Good Casseroles" we grew up with.
