*2 tablespoons olive oil
*1 tablespoon white vinegar
*1 t lemon juice
*1-1/2 tsp honey
*1/2 tsp lemon zest
*1/8 tsp salt
*1/8 tsp pepper
*4 cups fresh spinach, 5 oz
*1-cup cherry tomatoes, quarters
*3/4 cup sliced mushrooms, 2 oz
*2 radishes, slices
*1/4 cup chopped scallions
*2 tsp honey roasted flavored sliced almonds

1. Whisk together olive oil, vinegar, lemon juice, honey lemon zest, salt and pepper.
2. Add spinach, tomatoes, mushrooms, radishes and scallions.
3. Toss to coat.
4. Sprinkle with almonds.
