Monterey Ranch Dip with Almonds |
Ingredients

* 2 small tomatoes, peeled, seeded and diced
* 1/4 C almond slivers
* 1/4 C mild chili peppers, seeded and minced
* 1 green onion, chopped fine
* 1 1/2 C prepared Ranch dressing
* 1/2 C Monterey Jack cheese, shredded
* Almond slices
* Fresh cilantro

Directions

1. Place in a large bowl the tomatoes, almond slivers, chopped green onions and peppers then toss to mix together.
2. Completely cover the ingredients with the Ranch dressing and mix well.
3. Sprinkle the cheese on top and stir to combine.
4. Tightly cover the bowl and put in refrigerator to chill.
5. Put the almond slices and cilantro on top just before serving.

You'll need a real hearty chip or cracker to serve this dip. It's packed with flavor and your cracker has to be able to stand up to the solid texture, too. Try veggies, crackers, torilla chips, and chunks of bread and see what you like best. This dip is almost a meal, which is why I use it sometimes just for lunch!
