Nutty Onion Dinner Muffins |
Ingredients

* 4 medium onions, quartered
* 1 C butter, melted and cooled
* 3/4 C sugar
* 4 eggs, lightly beaten
* 1 TBSP salt
* 1 TBSP baking powder
* 3 C of flour
* 3 C walnuts, coarsely chopped

Directions
|
1. Preheat the oven to 425 and lightly grease a 12 cup muffin tin.
2. Puree the onions in the food processor the remove to a bowl.
3. Stir in the butter, sugar, eggs, salt, baking powder and flour, fold in the walnuts.
4. Spoon the batter into the prepared muffin tin and bake 20 minutes.
5. Cool in the pan 10 minutes then remove to a wire rack to cool completely.

These muffins are very flavorful and make a great dinner roll, or muffin if you like. The onions give a surprisingly tasty background to the walnuts. The combination is very interesting and once you try them, you'll make them over and over again. These muffins make a great addition to any holiday meal. Enjoy!
