Parmesan Zucchini Rolls - Bread Machine


*1 C of water
*2 tbsp vegetable oil
*1/3 C of nonfat dry milk
*1 1/2 tsp salt
*2 tbsp sugar
*4 C of bread flour
*1/3 C zucchini, grated
*1/2 C Parmesan cheese, grated
*2 tsp instant yeast


1. Place all the ingredients into the bread machine pan as directed by the manufacturer.
2. Press the dough cycle and when the cycle is complete remove the dough and let rest 15 minutes.
3. Divide the dough into 24 pieces, cover and let rise for 45 minutes.
4. Bake in a preheated 375 degree oven for 15 minutes or until golden brown.


Another great way to use up zucchini! And what better compliment is there to zucchini than Parmesan cheese. I like to brush a little butter on top of these rolls when they're done baking, but still hot, and then sprinkle them with more Parmesan cheese. It makes them even better!
