1. Preheat oven to 350.
2. Beat egg whites until stiff. In a separate bowl, beat egg yolks until smooth, then add potatoes. Gently add sour cream, cheese, white pepper and egg whites. Stir very gently.
3. Pour mixture into a baking dish and bake, uncovered for about 45 minutes, until lightly browned and puffy.
