Pistachio Cream Filled Apricot Halves |
Ingredients
|
* 12 apricots, halved and pitted
* 4 oz cream cheese, softened
* 1/2 cup pistachios, finely chopped
* additional pistachios to sprinkle on top

Directions

1. Mix cream cheese and pistachios together well.
2. Put apricot halves in dessert bowls.
3. Spoon a portion of the cream cheese mixture into the center of each apricot half.
4. Sprinkle more pistachios over the top for added appeal.
5. Serve immediately.

There are certain flavors that we know go together, and then there are other flavors that surprise us. It was quite by accident that we found out that pistachios and apricots go together. I ran out of pecans for another dessert using apricots and found a bag of pistachios in the pantry. I don't usually keep pistachios in the house so it was quite a fluke. We'll be trying this recipe again real soon - it is very yummy!
