Salmon in Light Horseradish Sauce


*2 tbsp cider vinegar, divided
*4 (6 oz.) salmon fillets
*1 C of fresh dill
*1 scallion, chopped
*1/2 C light mayonnaise
*1/2 C low fat sour cream
*1 tbsp horseradish
*2 tsp Dijon mustard


1. Place 1 inch of water and the vinegar into a skillet over high heat and bring to a boil.
2. Add the salmon, reduce the heat to low, cover the skillet and cook 10 minutes.
3. Blend the dill, scallions, mayonnaise, sour cream, horseradish and mustard in the blender until the scallions are chopped fine.
4. Remove the salmon to a platter and top with the horseradish sauce.


Salmon has such a great flavor, you don't want to drown it in spicy or super sweet sauces. This is a nice light sauce that just enhances the natural flavor of the salmon. Enjoy!
