Savory Honey Mustard Halibut |
Ingredients

* 1 1/4 lbs. halibut steaks (thawed if frozen)
* 1/2 C of salsa, chunky style
* 2 Tbsp honey
* 2 Tbsp Dijon mustard

Directions

1. Turn oven on to 450 degrees and allow to preheat.
2. Place the fish in a shallow 2 quart baking dish.
3. Put fish in preheated oven and bake for 6 to 8 minutes or until the fish flakes easily with a fork.
4. Remove baking pan with fish in it and drain any liquid from the baking dish - leave the oven on.
5. In a bowl, whisk together the salsa, honey, and Dijon mustard, then spread over fish.
6. Put fish back in oven and bake 4 to 5 minutes longer, until the sauce gets bubbly hot.

Halibut is a great fish to try for kids who don't think they like fish. It's very white and flaky and fresh tasting. This recipe is a real winner for kids, too, because of the sweet and tangy sauce. Use a mild salsa if your kids aren't adventurous eaters. You can even mix in a bit more honey if you think they would be more agreeable to a sweeter dish.
This easy recipe is a great start for a lot of tweaks. You can add onions, celery, green pepper, or any vegetable if you like. Try adding a bag of thawed mixed frozen veggies to the pan before you put the fish in. Serve with a side of brown rice and a salad for a very filling meal.
