Savory Marinaded Beef Tenderloin


*1 C of soy sauce
*3/4 C of beef broth
*1/2 C of olive oil
*2 tbsp red wine vinegar
*1/2 tsp hot pepper sauce
*4 garlic cloves, minced
*1 tsp pepper
*1 tsp dried thyme (optional, use 1 TBSP fresh)
*1/2 tsp salt
*1 bay leaf

*1 (3 1/2 lb.) beef tenderloin


1. Put all the ingredients (except tenderloin) in a large resealable bag, seal and shake well.
2. Scoop out 1 cup of the marinade and reserve in refrigerator.
3. Put tenderloin in bag, seal, and marinade overnight.
4. When ready to make the next day, heat the oven to 425 degrees, place a rack into a shallow baking dish and place the marinated beef on the rack.
5. Pour the cup of reserved marinade over roast and bake in oven for 1 hour, basting often.
6. Let stand 15 minutes before slicing.


Use fresh thyme for this recipe if you can. Thyme has a delicate flavor that can get sort of whimpy in the dried variety. Fresh is better.

Be sure to let this marinade overnight in the refrigerator. The flavor is very savory (like the recipe says) and it's worth the wait. I think this is a great company dish.
