Savory Sweet Marmalade Pork Roast - Crock Pot |

Ingredients

* 3 1/2 lb boneless pork roast
* 1/4 cup soy sauce
* 1/4 cup orange marmalade
* 1 Tablespoon ketchup
* 2 garlic cloves, minced or grated

Directions

1. Put pork roast in crock pot.
2. In a separate bowl, whisk together the soy sauce, orange marmalade, ketchup, and garlic; pour over roast.
3. Cover crock pot and cook on LOW for 7 to 8 hours.

For some reason, there was an incredible sale on boneless pork roasts at my local grocery store. I stocked up since we all love pork and there are literally hundreds of ways to cook a nice, boneless pork roast. This particular recipe was sort of a fluke because I had orange marmalade in the refrigerator leftover after we had house guests who like it. It turns out, the orange marmalade had just the right sweetness to compliment the pork and the soy sauce. This is a pretty crock pot dish that is suitable for company. Serve alongside candied carrots and smashed Yukon gold potatoes, or you might want to just slice the pork thinly and serve over a bed of spinach with a vinaigrette dressing.
