Sweet Raspberry Rice Pudding |
Ingredients

* 3 C of water
* 1 C long grain white rice
* 1/2 tsp salt
* 1 C sugar
* 1 tsp cinnamon
* 2 C of whole milk
* 1 tsp vanilla extract
* 2 (6 oz) containers of fresh raspberries, rinsed
* 2 (4 oz) containers of plain yogurt

Directions

1. Bring the water to a brisk boil then add rice and salt.
2. Simmer for 20 minutes on low heat, uncovered or until water has been absorbed.
3. Add the sugar and cinnamon.
4. Slowly stir in the milk.
5. Cook on low for 25 minutes or until thick, stirring occasionally.
6. Take the pan off the heat and stir in the vanilla.
7. Cool to room temperature for at least 30 minutes.
8. Add the berries and yogurt stirring gently to combine.
9. Best when chilled about 1 hour.

We used to make a simple rice pudding similiar to this with raisins when were growing up. This is a little twist on that traditional dish. Instead of raisins, you have a nice, refreshing raspberry and yogurt blend that is very delicious.
