Sweet Thai Chili Chicken


*1 1/4 lb chicken tenderloin pieces

*1 tbsp fresh lemon grass, chopped
*2 tbsp fresh lime juice
*2 scallions, chopped
*2 cloves garlic, finely minced
*1 tbsp freshly grated ginger
*2 tsp Thai sweet chili sauce


1. Combine the lemon grass, lime juice, scallions, garlic, ginger, and chili sauce in a bowl.
2. Lay the chicken in a shallow glass pan and pour the mixture over the chicken to coat.
3. Chill for at least 2 hours.
4. Heat the grill, remove the chicken and discard the juice.
5. Grill the chicken for 3 minutes per side or until cooked through.


One ingredient I have trouble find is lemon grass, unfortunately. So, when I can't get it, I just substitute lemon zest and juice - about 1 Tablespoon lemon juice with 1/4 teaspoon zest added. You can add a little chopped parsley for green if you can't get the lemon grass. Either way, this is a very different chicken dish I know you'll want to try.
