Sweeter Than Sweet Potato Salad |
Ingredients

* 6 C fresh sweet potatoes, peeled, cubed, and cooked - do not overcook.
* 1 C mayonnaise
* 1/2 C brown sugar, firmly packed
* 1 C pecans, toasted and chopped
* 1/2 C raisins

Directions

1. Allow the potatoes to cook in simmering water, uncovered for about 10 to 12 minutes or until just fork tender. Do Not let them get too soft or they won't hold up in the salad.
2. Drain the potatoes well and set aside to cool.
3. Whisk the mayonnaise and brown sugar together in a large mixing bowl.
4. When the sugar has dissolved fold in the pecans and raisins.
5. Place the potatoes into a serving bowl.
6. Add the mayonnaise mixture and stir until the potatoes are completely covered.
7. Cover the bowl and refrigerate until completely chilled through.
