Tamari Tofu with Orange Maple Marinade |
Ingredients

* 1/4 C tamari soy sauce
* 3 TBSP rice vinegar
* 3 TBSP maple syrup
* 1/2 C orange juice
* 1 tsp fresh ginger, grated
* 2 cloves garlic, minced
* 1/4 tsp dry mustard
* 2 tsp orange peel, grated
* 2 (8 oz.) blocks of extra firm tofu, cut into large pieces
* cooked brown or white rice for serving

Directions

1. Whisk the soy sauce, vinegar, syrup, and orange juice together in a bowl.
2. Add the ginger, garlic, mustard and orange peel and whisk to combine.
3. Add the tofu, stirring to coat, cover the boil and marinate 1 hour.
4. Heat the oven to 375 and place the tofu and
1/2 C of marinade into a baking dish.
5. Bake 1 hour stirring occasionally.
6. Serve over hot cooked rice, brown or white.

We have a "meatless Monday" in our house which always has me on the hunt for new meals with a protein base without meat.
Tofu is a great protein source but you can't fool people into thinking it's meat... so don't even try! However, when cooking with tofu you have to remember just three things - flavor, flavor, flavor! Tofu has no flavor of it's own so it absorbs whatever you cook it in. Just look at the flavors in this recipe! There is no way that this tofu is not going to come out wonderfully tasty.
The complaint some people have about tofu is the texture. You can solve that by choosing extra firm tofu. It will have a firm feeling similar to a hunk of cheese. This is much more appealing than the smooshy texture of the softer variety.
Give this dish a try. Don't even tell your family what you're cooking and I suspect they'll bite into a chunk of tofu and not have a thing to complain about!
