Tomato Basil Quick Omelet


* 2 tbsp butter, divided
* 2 ripe tomatoes, chopped
* 1/2 tsp dried basil
* 1/2 tsp salt
* 1/2 tsp pepper
* 2 eggs, beaten


1. Melt 1 tbsp butter in a skillet over medium heat, add the tomatoes and fry for 2 minutes.
2. Remove from the heat and mix in the basil, set aside.
3. Heat a skillet until hot then add the remaining butter until it begins to foam then add the eggs and shake the pan until the eggs begin to set.
4. Add the tomatoes and cook until the bottom begins to brown.
5. Fold the omelet in half before serving.


If you want to throw together a quick breakfast or lunch, this omelet is the perfect recipe to try. It gets a lot of flavor from the tomatoes and basil so you don't have to fuss with a lot of prep work cutting onion, grating cheese, and all the things you do for a "big" omelet. The basil and tomatoes give this omelet a "big" flavor all by themselves.
