Tropical Salsa Spread


*1/2 C mango, pitted, peeled and diced
*1 green onion, sliced thin
*1/4 C red bell pepper, diced
*1/4 jalapeno pepper, seeded and chopped fine
*2 TBSP cilantro, chopped
*2 TBSP lime juice
*1 (8 oz.) container pineapple cream cheese
*32 slices French bread


1. Place the mango into a mixing bowl or other container with a tight fitting lid.
2. Add the green onion and both peppers.
3. Mix in the cilantro to combine well.
4. Pour in the lime juice.
5. Place the lid on the container and turn the container to coat the ingredients and refrigerate for at least 2 hours.
6. Spread slices of bread with the cream cheese evenly.
7. Top each slice of bread with the chilled salsa.


Just when you think you know what salsa should be, we throw in a new twist. This tropical version of the classic salsa is a great surprise on any buffet table, potluck, or appetizer plate. My family likes to just munch on it for lunch! It's pretty enough for company and easy enough for family.
