Vegetarian Vegetable Soup - Crock Pot

Ingredients

* 32 oz bottle vegetable tomato juice
* 6 oz can tomato paste
* 1 tablespoon minced garlic
* 1/2 cup frozen chopped onion
* 2 bags (16 oz each)frozen mixed vegetables for stew
* 14 oz can vegetable broth
* 3 cups water
* 1/2 teaspoon Italian seasoning
* 1 teaspoon salt
* 1 teaspoon sugar (optional)

Directions

1. Place all ingredients in crock pot and mix well.
2. Cook, covered, on low for 8 hours.

Story

Whether you or one of your family members is a vegetarian or not, you may want to switch to vegetable broth once in awhile instead of always using chicken broth. The vegetable broth gives this soup a real nice, deep vegetable flavor.

You may want to try another vegetable broth trick that I've learned. The next time you make a batch of rice, use vegetable broth instead of water. The flavor is quite nice and you get all the nutrients of the vegetables right there in your rice. Very cool.
