Without Wheat Brownies |
Ingredients

*3/4 C unsalted butter or margarine
*3/4 C sugar
*5 separated eggs
*6 ounces bittersweet chocolate, melted and cooled
*6 ounces finely ground almonds or almond flour
*1 pinch of salt

Directions
|
1. Cream the butter and sugar together then add the egg yolks and mix well.
2. Stir the melted chocolate into the creamed mixture then fold in the ground almonds.
3. Beat the egg whites until stiff and fold them into the batter.
4. Grease and flour a 9X9 baking pan and spread the batter evenly into the pan.
5. Bake in a preheated 350 degree oven for 45 minutes and cool on a wire rack before cutting.

Cutting the wheat out of these brownies doesn't affect the quality or the taste one bit. The secret is in the ground almonds or almond flour.
It's simple to grind your own almonds. Just use a food processor or blender to grind up "raw" almonds. Pulse the blender until you get a coarse powder, but stop before it gets clumpy looking. If you blend the almonds beyond that "almond meal look" you'll end up with almond butter.
