Healthy Tomato Soup

Ingredients

16 servings

* 1 (14 ˝ oz) can of no salt added diced tomatoes
* 1 quart reduced-sodium tomato juice
* 1 quart low-sodium V-8 Juice
* 2 large potatoes
* 1 large onion – sliced
* 1/4 cup low fat milk
* 1 tbsp sodium-free margarine
* Seasonings (salt, pepper, herbs)

Directions

Dice potatoes and onion. Add to a pot and just cover with water. Add the margarine and boil until the potatoes are tender. Add the tomatoes and the tomato and vegetable juice. Reduce heat and simmer for 15 minutes. Add milk and seasoning.
