Tortellini Soup |

Ingredients

6 Servings
* 2 cloves garlic
* 1 tbsp butter
* 2 cans chicken broth
* 1 (8 oz) pack of frozen or fresh cheese tortellini (thawed)
* 1 (10 oz) pack of frozen Spinach (thawed)
* 1 (16 oz) can stewed tomatoes (un-drained and chopped)
* Parmesan cheese as garnish

Directions

Add butter and garlic to a large saucepan and cook over medium heat for 3 to 3 minutes.
Add the broth and bring to a boil. Add tortellini and simmer for 10 minutes.
Add Spinach and tomatoes. Continue to simmer for 5 minutes.
Serve topped with Parmesan cheese.
